Ingrédients

  • 1 small red onion, peeled
  • 2 garlic cloves, peeled
  • 400g can chickpeas (drained and rinsed)
  • 350g pink juice pulp (or a mix of carrot and beetroot pulp)
  • 2oz breadcrumbs
  • 4 tablespoons corn flour
  • 1 ½ teaspoon salt
  • 2 teaspoons oregano
  • 1 teaspoon smoked paprika
  • black pepper

Instructions

Étape 1
Preheat oven to 180°C, and line a baking tray with baking parchment.

Étape 2
Place the onion, garlic cloves and chickpeas in a food processor. Process until the chickpeas have been mashed. Add the rest of the ingrédients to the food processor and pulse until smooth.

Étape 3
With moist hands, roll into balls using roughly 1 tablespoon of mixture for each ball and place on the baking sheet. Bake for 25-30 minutes. Serve with tomato sauce or yogurt dip.
